Beans from Uprising Seeds
Eric Budzynski, Uprising Seeds, supplied the beans to Chef Erica Jennings, Sweedeedee. Jennings braised Rockwell beans in milk with lemon and thyme, and served both the whole bean and a purée on toasted baguette with a radicchio garnish. An excellent take on baked beans, which is what the Rockwell is noted for.
