BEEF
Curator: Keal Pontin, North Shore Livestock Chef: Jessica Rohr, Forage
The original North Shore Livestock breed started with 150 wild cattle captured off Mauna Kea during a feral cattle control project for Hawaiian Homelands. They are direct descendants of the cattle gifted to Kamemehameha I at the end of the 18th century. To improve the genetics of the herd, an Angus bull from Ernie Mottos of Hilo was introduced. From there they have introduced new bulls from Kansas with high yearling weight & better marbling content along with two Herfords. Their latest generation still has the hardiness of Hawaiian wild cattle but with modern genetic improvements that increase the ability of their breed to finish on only grass and produce a delicious product.
