‘Bickford’ is a new variety of hard red wheat from University
of Wisconsin-Madison small grains breeding efforts named
after the late Paul Bickford of Bickford Farms/Meadowlark
Organics.
Researchers Lucia Gutierrez, Julie Dawson, and Pablo
Sandro of UW-Madison developed the variety in partnership with farmers, millers, bakers, breeders, and researchers to grow, bake with, and compare the varieties in the trials.
