SHRIMP
Curators: Anthony Mau, Kualoa Grown (Kualoa Ranch) and Dustin Moss, Oceanic Institute
Chef: Kimo Ka’uhane, Kualoa Ranch
Pacific white shrimp (Litopenaeus vannamei) are locally grown at Kualoa Ranch’s Pahalona Ag Center in Hakipu’u, one of the last-standing aquatic farms producing prawns. Ironically, this was the very first shrimp farms established on Oahu back in the early 1980’s. Today, we feature shrimp being produced in 0.5-acre earthen ponds using fresh seawater derived from Kaneohe Bay, which yields ~200lbs of fresh shrimp per week.
