In 2016, Stacy and Patsy became business partners and started selling their pork to the market. 2 Lady Farmers have had to make adjustments to being in the market. When customers purchase pigs off the farm, they want lean pigs. Chefs prefer more fat because “the flavor is in the fat”. The 2 ladies brought in semen from the mainland to add the Duroc breed into their bloodlines for more marbling. After 1.5 years of selective breeding, half their herd is now 50% Duroc. Recently, they have purchased 3 Berkshire (aka Kurobuta) sows with a goal of providing 50% & 100% Kurobuta pork.
