Chilean Choclo Vegetable Corn
Bill Tracey, UW- Madison, has been working on a non-sweet vegetable corns for chefs to use in savory cooking. Chef Maya Lovelace, Mae, tasting included Fresh choclo corn grits, salad of sour blue eyed blonde corn, pickled jimmy nardello peppers and Black Locust Farm herbs, topped with crunchy choclo corn nuts.
